Maybe a regular, say once per month, booking of the Umbrella Centre would work better. Either a Saturday or Sunday.  This allows artists to take tables and other than indemnity insurance there are no other costs. I was thinking of booking it and just posting an invitation to artists to sub let some tables - but if Made In Whitstable did it as an organisation it would also raise the profile in the area.
